I think I gave the MAF a good cleaning during this foray so I'm kinda ruling that out as the culprit.

The coolant temp sensor is not a bad idea however. I've had some problem with the fans not coming on as of recently as well, could all be interrelated.

Cool on the MAF, it was just a shot and I didn't see it on the list.
Sounding more like the coolant temp sensor now.
