the 3500 manifolds can be found from either GM, the B/S/T forum here or a junk yard, you can use www.car-part.com and look up a set for a '04 Malibu 3500.
I have no idea if the rear manifold will work in your car, it's possible though. When i used those manifolds in a Sunbird i had to use 2 fronts because of clearance issues. It performs extremely well though.
You could also get headers for a grand am GT from S&S.. they'll probably fit (someone else would know better than me i'm sure).
Underdrive pulleys are nice but wait for WOT-Tech to come out with the new version with a dampener.
as for your 240/260 goal assuming that's at the crank you might get close to that with headers on the stock heads and cam.. but a decent cam and a 3500 top end will put you over that easy.
