What TBs from other motors will bolt onto the 2.8 Iron Head intake? I'll probably need a larger diameter one with the cam and proted heads. I'll also port the UIM neck to match the diameter of the TB. I want to get one from a junkyard to keep cost down.

nothing will bolt right on. however, i spent some time and made a 94 jeep 4.0l throttle body work. its a 60mm throttle plate, but necks down to 54mm, easy to make a true 60mm with some work.
what i did is used a peice of 3/8" thick aluminum and cut the hole open to match the throttle body and drilled and tapped the 4 holes for it. i then drilled and countersunk the 2 holes to bolt it to the intake with 8mm countersunk bolts. i then bolted the plate to the intake and ported the manifold to match. i also had to modify the linkage. the jeep iac valve and tps will work just fine with the gm computer, although you may have to adjust the throttle stop once you hget the motor warmed up so you have your desired idle.
its not exactly a bolt on, it took about 4 hours to build the adaptor, and a bunch of fiddling around to get it on the car and working right. but unless you have some ingenuity and are willing to fab something up to make something work, your pretty much SOL.

your best bet is to go to a junk yard, take off a Camaro plenum and walk around and find a larger TB that looks close..

I wonder if you could swap the linkage to the 4.0l jeep TB. The bolt pattern looks like it might work for a 3500 plenum too. hmmm!sigpic New 2010 project (click image)
