IMO, for idle and low RPM SFI is going to get you more response and MPG, since it sprays when the intake valve opens up for that particular cylinder, instead of all them on that bank. Once you hit high RPM's it's not going to matter as much since it all is happening so fast that to your eye the injector probably looks like it's spraying constantly probably like a TBI. Not sure how much MPG is actually gained if any from SFI vs MPFI.
Either one is better than carb/TBI since the fuel is sprayed right at the valve and doesn't have to travel down the intake and stick to the walls and puddle up.
If it's not a WHOLE lot more work then SFI would be cool to try out. In your case you're not swapping to a whole gen3 engine, just the top end, so you will lack the cam sensor that the factory PCM's use to calculate SFI. I'm not sure how megasquirt does it.
