I bought a kit from GM the first time I had to do this. It came with bolts and the long ones were pre-coated with thread lock. Recently I had to put new head gaskets on. The GM gasket seemed A-OK when I pulled the LIM, I'd guess that was about 65,000 miles or so of use. The head gasket set from FelPro didn't have bolts so I cleaned the existing ones up and put on some locktite. I've read a few different places where that's recommended. (Don't forget to chase the threads on the block before putting it back together.)
Its iron head. No difference. Keep everything de greased with brake clean, proper bolt torque and DO NOT EVER CUT the gasket to fit past the pushrods and you will be fine.
I would stick with the stock setup it makes assembly and dis assembly easier. I would never use lock washers on something that has a critical torque spec like the intake manifold. Just use a little assembly on the threads and under the head of the bolts and nuts
