Assuming you're talking about the three Gen 1 engines, the differences are minimal - these swaps are pretty much plug and play
Blocks are the same size - 3.1 and 3.4 have 4mm longer stroke than the 2.8; the 3.4 has a 3mm larger bore than the 2.8 or 3.1. The 3.4 has more "webbing" in the lifter gallery. Depending on the original application, the 3.1 and 3.4 may have the ability to run a DIS ignition (reluctor wheel on the crank and a crank position sensor).
Some 3.4's came in a RWD configuration, so the starter may need to be relocated to the other side of the block - this involves drilling and tapping a couple of holes - jigs are available for this.
Gen 2 3.1 came with aluminum heads and different intake manifolds - you'll have to use a DIS ignition with this engine. Engine mounts are the same as the previous generation engines. might need to do some exhaust work. Power potential isn't really any different than the gen 1 engines, but does have about 20 ft-lb more torque than the 2.8.
Someone else will have to discuss the differences in the Gen 3 engines, but basically these blocks have better oiling to the crank, are designed for roller cams, the 3400 and later 3100's have larger valves, better flowing heads and intake manifolds than the gen 2 engines. I don't know if there were changes to the engine mounts compared to earlier gens.

Crane and COMP are your 2 major sources. They sell a complete list of valvetrain parts for the gen I engines.
