I have swapped a 98 3.1 into a gen 1 rs which had a 2.8. the motor had good oil pressure when i took it out of the donor car and now it has only enough to fill the oil filter. The 87 2.8 had two oil sensors on it one on the oil filter and one up on the intake near the cam. I have hooked the oil sensor on the block to the car and there is a sensor on th 3.1 oil pan, what is this for? the wires that went to the sensor on the top of the 2.8 when touched together I hear a running in the intake on the 3.1 what is this for? Is there something in the 3.1 that needs power to cause it to pump oil?

How are you reading the pressure? gauge on the dash? are u using the sensors for the new engine or the original off the old engine? Maybe the sensors use different voltages and is just reading wrong on the gauge.. Also the oil sensor in the oil pan, i think you are refering to the "Oil Level" sensor. alot of the newer cars have a dummy light when your oil level is to low in the pan. no electric oil pumps they are all mechanical..
maybe im way off.. Just taking a guess..

Oil Pressure
I am using the sensors from the new motor except the knock sensor in had a different hookup so I switched it. The motor is making alot of noise so it sounds like it is not getting enough oil. The donor car had been sitting for awhile is it possible for the pump to loose prime? If that is the case if I put thicker oil will it prime itself? Also if i have to change the pump can it be done with the motor in the car?

You should pull the distributor and prime it. The pump will self prime with any weight oil, even water, but it may take too long and you will wipe the bearings.1993 EXT. CAB, 3.4L V6 TBI, 5spd manual. Sonoma

i'd use all the sensors from your 2.8, the OPSU is probably different.
the IAC motor and TPS sensors are the same though...
